  • For the wet ingredients:
  • 1 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • For optional add-ins:
  • 1/2 cup raisins or chocolate chips (optional)
  • 1/4 cup chopped nuts (optional)

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. 2. In a large bowl, mix all dry ingredients (oats, flour, brown sugar, baking powder, baking soda, salt, and cinnamon).
  3. 3. In another bowl, whisk together milk, oil, egg, and vanilla extract.
  4. 4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. 5. Fold in optional add-ins like raisins, chocolate chips, or nuts if using.
  6. 6. Spoon the batter into the muffin cups, filling each about 2/3 full.
  7. 7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. 8. Let cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

Store in an airtight container for up to 3 days or freeze for longer storage. For extra flavor, try adding a mashed banana or grated apple to the batter.
