- 2 lbs potatoes, quartered
- 2 onions, thinly sliced
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 cloves garlic, minced
- Fresh parsley, chopped for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook until caramelized, about 10 minutes.
- Add garlic, thyme, rosemary, salt, and pepper; stir for 1 minute.
- Add sliced sausage and cook until browned, about 5 minutes.
- Add quartered potatoes and cover; cook until tender, about 15-20 minutes, stirring occasionally.
- Garnish with fresh parsley and serve hot.
