For the Crust:

  • 2 cups rolled oats
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • For the wet mixture:
  • 2 ripe bananas, mashed
  • 1/4 cup creamy peanut butter
  • 1 3/4 cups milk (dairy or plant-based)
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup
  • For topping:
  • 1 banana, sliced
  • 2 tbsp peanut butter, melted
  • 1 tbsp chopped peanuts (optional)

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 375°F (190°C) and grease an 8×8 baking dish.
  2. 2. In a large bowl, mix dry ingredients: oats, baking powder, cinnamon, and salt.
  3. 3. In another bowl, whisk mashed bananas, peanut butter, milk, vanilla, and maple syrup until smooth.
  4. 4. Pour wet ingredients into dry ingredients and stir until fully combined.
  5. 5. Transfer mixture to prepared baking dish and smooth the top.
  6. 6. Arrange banana slices on top in a single layer.
  7. 7. Bake for 35-40 minutes until set and golden at edges.
  8. 8. Drizzle with melted peanut butter and sprinkle with chopped peanuts before serving.

Notes

Store leftovers covered in refrigerator for up to 5 days. Reheat individual portions with a splash of milk. For vegan version, use plant-based milk and ensure peanut butter is vegan.
