These delicious bars combine the flavors of peanut butter, banana bread, and chocolate chips with the heartiness of oats for a perfect snack or breakfast treat.

For the Crust:

- 1 1/2 cups mashed ripe bananas (about 3 medium bananas)
- 1/2 cup creamy peanut butter
- 1/4 cup honey
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups old-fashioned rolled oats
- 1/2 cup whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- For the topping:
- 1/2 cup semi-sweet chocolate chips
- 2 tablespoons chopped peanuts (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a large bowl, whisk together mashed bananas, peanut butter, honey, egg, and vanilla extract until well combined.
- In a separate bowl, mix together oats, whole wheat flour, baking powder, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Fold in 1/4 cup of the chocolate chips (reserve the rest for topping).
- Pour the batter into the prepared baking pan and spread evenly.
- Sprinkle the remaining chocolate chips and chopped peanuts (if using) over the top.
- Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow to cool completely in the pan before lifting out using the parchment paper and cutting into bars.
Notes
Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. These bars freeze well for up to 3 months. For a nut-free version, substitute sunflower seed butter for the peanut butter and omit the chopped peanuts.
