These delicious bars combine the flavors of peanut butter, banana bread, and chocolate chips with the heartiness of oats for a perfect snack or breakfast treat.

For the Crust:

  • 1 1/2 cups mashed ripe bananas (about 3 medium bananas)
  • 1/2 cup creamy peanut butter
  • 1/4 cup honey
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • For the topping:
  • 1/2 cup semi-sweet chocolate chips
  • 2 tablespoons chopped peanuts (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a large bowl, whisk together mashed bananas, peanut butter, honey, egg, and vanilla extract until well combined.
  3. In a separate bowl, mix together oats, whole wheat flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in 1/4 cup of the chocolate chips (reserve the rest for topping).
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Sprinkle the remaining chocolate chips and chopped peanuts (if using) over the top.
  8. Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  9. Allow to cool completely in the pan before lifting out using the parchment paper and cutting into bars.

Notes

Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 1 week. These bars freeze well for up to 3 months. For a nut-free version, substitute sunflower seed butter for the peanut butter and omit the chopped peanuts.
