  • 6 cups Rice Krispies cereal
  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • 1 1/2 cups creamy peanut butter
  • 1 teaspoon vanilla extract
  • For topping (optional):
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon coconut oil

Instructions

1. Prepare the Crust:

  1. 1. Grease a 9×13-inch baking dish and set aside.
  2. 2. In a large saucepan over medium heat, combine the sugar and corn syrup. Stir until the sugar dissolves and the mixture begins to boil.
  3. 3. Remove from heat and quickly stir in the peanut butter and vanilla extract until smooth.
  4. 4. Add the Rice Krispies cereal and gently fold until fully coated.
  5. 5. Press the mixture firmly into the prepared baking dish using a spatula or wax paper.
  6. 6. (Optional) Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring until smooth. Drizzle over the bars.
  7. 7. Let cool completely before cutting into squares.

Notes

Store in an airtight container at room temperature for up to 5 days. For a firmer texture, refrigerate before cutting. Substitute almond butter if peanut allergies are a concern.
