- 24 oz cream cheese, softened

- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup crushed pistachios
- FOR THE BLACKBERRY LAYER:
- 2 cups fresh blackberries
- 1/4 cup sugar
- 1 tbsp lemon juice
- FOR THE MASCARPONE TOPPING:
- 8 oz mascarpone cheese
- 1/2 cup heavy cream
- 1/4 cup powdered sugar
- Fresh blackberries and pistachios for garnish
Instructions
- Preheat oven to 325°F (165°C).
- Prepare crust: Mix crushed pistachio cookies, melted butter, and sugar. Press into the bottom of 8-inch springform pans.
- Bake crust for 10 minutes, then cool.
- Make filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and pistachios.
- Pour filling over crusts and bake for 50-60 minutes until set.
- Prepare blackberry layer: Cook blackberries, sugar, and lemon juice until thickened.
- Top cheesecake with blackberries.
- For topping: Whip mascarpone, cream, and powdered sugar until peaks form.
- Pipe topping on cheesecake towers and garnish.
Notes
Allow cheesecake to chill for at least 4 hours before serving. Use high-quality pistachios for best flavor.
