  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup crushed pistachios
  • FOR THE BLACKBERRY LAYER:
  • 2 cups fresh blackberries
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • FOR THE MASCARPONE TOPPING:
  • 8 oz mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • Fresh blackberries and pistachios for garnish

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Prepare crust: Mix crushed pistachio cookies, melted butter, and sugar. Press into the bottom of 8-inch springform pans.
  3. Bake crust for 10 minutes, then cool.
  4. Make filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla and pistachios.
  5. Pour filling over crusts and bake for 50-60 minutes until set.
  6. Prepare blackberry layer: Cook blackberries, sugar, and lemon juice until thickened.
  7. Top cheesecake with blackberries.
  8. For topping: Whip mascarpone, cream, and powdered sugar until peaks form.
  9. Pipe topping on cheesecake towers and garnish.

Notes

Allow cheesecake to chill for at least 4 hours before serving. Use high-quality pistachios for best flavor.
