A fun and colorful layered gelatin dessert that’s perfect for parties or as a sweet treat. Each layer is a different vibrant color, creating a stunning rainbow effect when sliced into cubes.

For the Crust:
- For Gelatin Base:
- 6 cups boiling water, divided
- 6 packages (3 oz each) flavored gelatin (red, orange, yellow, green, blue, purple)
- For Sweetened Condensed Milk Layer:
- 1 cup boiling water
- 1 packet (0.25 oz) unflavored gelatin
- 1 can (14 oz) sweetened condensed milk
- For Assembly:
- Cooking spray
Instructions
1. Prepare the Crust:
- 1. Prepare a 9×13 inch baking dish by lightly coating with cooking spray.
- 2. Make the first colored layer: Dissolve one package of gelatin in 1 cup boiling water. Pour into prepared dish and refrigerate until set (about 30 minutes).
- 3. While first layer sets, prepare the sweetened condensed milk layer: Sprinkle unflavored gelatin over 1 cup boiling water and stir until completely dissolved. Stir in sweetened condensed milk until smooth. Let cool to room temperature.
- 4. Once first colored layer is set, carefully pour about 3/4 cup of the milk mixture over it. Refrigerate until set (about 15 minutes).
- 5. Repeat steps 2-4 with remaining gelatin colors, alternating colored layers with thin milk layers.
- 6. After final layer is set (at least 4 hours or overnight), run a knife around edges and invert onto cutting board. Cut into 1-inch cubes.
Notes
For best results, use clear glass dish to see layers as they set. Work quickly when pouring layers to prevent premature setting. Store refrigerated for up to 5 days.
