For the Crust:
- For the chicken and potatoes:
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
- 1.5 lbs baby potatoes, quartered
- 2 tbsp olive oil
- For the ranch seasoning:
- 1 packet (1 oz) dry ranch seasoning mix
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp smoked paprika
- For garnish:
- 1/4 cup chopped fresh parsley
- 1/4 cup shredded cheddar cheese (optional)
Instructions
1. Prepare the Crust:
- 1. Preheat grill to medium-high heat (or oven to 400Β°F).
- 2. In a large bowl, toss chicken and potatoes with olive oil.
- 3. In a small bowl, mix ranch seasoning with garlic powder, onion powder, and smoked paprika.
- 4. Sprinkle seasoning mixture over chicken and potatoes, tossing to coat evenly.
- 5. Divide mixture evenly among 4 large sheets of heavy-duty aluminum foil (about 12Γ18 inches each).
- 6. Fold foil over mixture and crimp edges tightly to form sealed packets.
- 7. Grill for 25-30 minutes or bake for 35-40 minutes until chicken reaches 165Β°F and potatoes are tender.
- 8. Carefully open packets (watch for steam) and garnish with parsley and cheese if desired.
Notes
For crispier potatoes, open packets during last 5 minutes of cooking. Can substitute sweet potatoes or add vegetables like bell peppers or zucchini.
