For the Crust:

  • 1 lb fresh cheese ravioli
  • 1 pint cherry tomatoes, halved
  • 1 bunch asparagus, trimmed and cut into 1-inch pieces
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 tsp red pepper flakes
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions

1. Prepare the Crust:

  1. Bring a large pot of salted water to a boil. Cook the ravioli according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing for 1 minute until fragrant.
  3. Add asparagus to the skillet and cook for 3-4 minutes until tender-crisp.
  4. Stir in cherry tomatoes and cook for another 2 minutes until they begin to soften.
  5. Add the cooked ravioli to the skillet and toss gently to combine with the vegetables.
  6. Season with salt and black pepper to taste.
  7. Serve hot, garnished with grated Parmesan cheese and fresh basil leaves.
