- 1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or a wreath-shaped pan.
- 2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- 3. In another bowl, mix buttermilk, oil, eggs, vanilla, cocoa powder, and red food coloring until combined.
- 4. Gradually add wet ingredients to dry ingredients, mixing until just combined. Do not overmix.
- 5. Divide batter into prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
- 6. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- Frosting and Decoration:
- 7. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
- 8. Assemble the cake into a wreath shape using one of the cakes as the base and cutting the second.
- 9. Frost the cake evenly.
- 10. Decorate with pine sprigs and fresh berries to form a wreath. Dust with powdered sugar if desired.
