For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup sour cream
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325°F (165°C). Line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press firmly into the prepared pan.
  3. In a large bowl, beat cream cheese and 1/2 cup sugar until smooth. Add eggs one at a time, then mix in sour cream, lemon zest, lemon juice, and vanilla.
  4. Gently fold in blueberries. Pour mixture over the crust and spread evenly.
  5. Bake for 30-35 minutes until the center is set. Cool completely, then refrigerate for at least 4 hours before slicing.
