Ingredients

  • 4 medium beets, trimmed
  • 4 ounces brie cheese, sliced
  • 1/2 cup pomegranate arils
  • 1/4 cup honey
  • 2 sprigs fresh thyme
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss beets with olive oil, salt, and pepper. Roast for 35-40 minutes until tender.
  3. Let beets cool, then peel and slice into rounds.
  4. In a small pan, warm honey with thyme sprigs over low heat for 5 minutes. Remove thyme.
  5. Assemble towers: Place beet slice on plate, top with brie, repeat layers, top with pomegranate.
  6. Drizzle with thyme honey and serve.

Notes

For best results, use fresh beets and allow them to cool before handling to avoid staining your hands.
