- 4 medium beets, trimmed
- 4 ounces brie cheese, sliced
- 1/2 cup pomegranate arils
- 1/4 cup honey
- 2 sprigs fresh thyme
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F (200°C).
- Toss beets with olive oil, salt, and pepper. Roast for 35-40 minutes until tender.
- Let beets cool, then peel and slice into rounds.
- In a small pan, warm honey with thyme sprigs over low heat for 5 minutes. Remove thyme.
- Assemble towers: Place beet slice on plate, top with brie, repeat layers, top with pomegranate.
- Drizzle with thyme honey and serve.
