Description
A vibrant and healthy salad featuring roasted beetroot and sweet potato, topped with feta and fresh parsley.
Ingredients
Scale
- 2 large beetroots, peeled and cubed
- 2 sweet potatoes, peeled and cubed
- 100g feta cheese, crumbled
- 100g fresh parsley, chopped
- 3 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 200Β°C.
- Toss beetroot and sweet potato cubes with 2 tbsp olive oil, salt and pepper.
- Spread on baking tray and roast for 30-35 minutes until tender.
- In a bowl, crumble feta, chop parsley.
- Add roasted veg, dress with olive oil, toss.

Best served warm or at room temperature.
