Ingredients

Instructions

  1. Preheat the oven to 425°F.
  2. Toss the carrots with olive oil, salt, and pepper on a baking sheet.
  3. Roast the carrots in the oven for 20-25 minutes, until tender and caramelized.
  4. In a bowl, whip the ricotta cheese until smooth.
  5. Spread the whipped ricotta on a serving platter.
  6. Top with the roasted carrots.
  7. Drizzle with honey mixed with red pepper flakes.
  8. Garnish with fresh herbs and serve immediately.

Notes
