  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 4 oz goat cheese, crumbled
  • 1/2 cup dried cranberries
  • 2 tbsp olive oil
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tbsp fresh thyme leaves (optional, for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss the sweet potato rounds with olive oil, salt, and pepper in a large bowl.
  3. Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
  4. Roast for 15 minutes, then flip the rounds and sprinkle with goat cheese and cranberries.
  5. Return to the oven and roast for another 10-15 minutes until the potatoes are tender and the cheese is slightly melted.
  6. Garnish with fresh thyme leaves if using. Serve warm.

Notes

For extra crispness, broil for the last 1-2 minutes. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to maintain texture.
