- 2 large sweet potatoes, sliced into 1/2-inch rounds
- 4 oz goat cheese, crumbled
- 1/2 cup dried cranberries
- 2 tbsp olive oil
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 tbsp fresh thyme leaves (optional, for garnish)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a large bowl.
- Arrange the sweet potato rounds in a single layer on the prepared baking sheet.
- Roast for 15 minutes, then flip the rounds and sprinkle with goat cheese and cranberries.
- Return to the oven and roast for another 10-15 minutes until the potatoes are tender and the cheese is slightly melted.
- Garnish with fresh thyme leaves if using. Serve warm.
Notes
For extra crispness, broil for the last 1-2 minutes. Store leftovers in an airtight container in the refrigerator for up to 2 days. Reheat in the oven to maintain texture.
