Ingredients

  • 1 whole rotisserie chicken, shredded (about 4 cups)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 8 ounces mushrooms, sliced
  • 4 cups chicken broth
  • 1 cup carrots, chopped
  • 1 cup celery, chopped
  • 1 teaspoon thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened, about 5 minutes.
  3. Add mushrooms, carrots, and celery; cook for another 5 minutes.
  4. Stir in shredded chicken, chicken broth, and thyme.
  5. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Season with salt and pepper before serving.

Notes

Use leftover rotisserie chicken for the best flavor. Store in an airtight container for up to 3 days.
