- 1 onion, diced
- 3 garlic cloves, minced
- 8 ounces mushrooms, sliced
- 4 cups chicken broth
- 1 cup carrots, chopped
- 1 cup celery, chopped
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until softened, about 5 minutes.
- Add mushrooms, carrots, and celery; cook for another 5 minutes.
- Stir in shredded chicken, chicken broth, and thyme.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper before serving.
