Description

A creamy and comforting soup made with tender rotisserie chicken and earthy mushrooms, perfect for a quick meal.


Ingredients

  • 1 rotisserie chicken, shredded (about 3 cups)
  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 8 ounces mushrooms, sliced
  • 3 garlic cloves, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and cook until softened, about 5 minutes.
  3. Add sliced mushrooms and minced garlic; cook for another 5 minutes until mushrooms are tender.
  4. Stir in shredded rotisserie chicken and chicken broth; bring to a simmer.
  5. Reduce heat and stir in heavy cream; season with salt and pepper.
  6. Simmer for 10-15 minutes, then garnish with fresh parsley and serve.

Notes

For a lighter version, substitute heavy cream with milk or half-and-half. This soup freezes well for up to 2 months.
