- 1 rotisserie chicken, shredded (about 3 cups)
- 2 tablespoons olive oil
- 1 large onion, diced
- 8 ounces mushrooms, sliced
- 3 garlic cloves, minced
- 4 cups chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and cook until softened, about 5 minutes.
- Add sliced mushrooms and minced garlic; cook for another 5 minutes until mushrooms are tender.
- Stir in shredded rotisserie chicken and chicken broth; bring to a simmer.
- Reduce heat and stir in heavy cream; season with salt and pepper.
- Simmer for 10-15 minutes, then garnish with fresh parsley and serve.
Notes
For a lighter version, substitute heavy cream with milk or half-and-half. This soup freezes well for up to 2 months.
