Instructions

  1. Preparation:
  2. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
  3. Mix the Bases:
  4. In a large bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, and melted butter. Stir well to incorporate.
  5. Add Wet Ingredients:
  6. In a separate bowl, whisk together the milk, eggs, garlic powder, and onion powder.
  7. Combine Wet and Dry:
  8. Gradually add the dry ingredients (flour, baking powder, salt, pepper, and optional paprika) to the potato mixture, alternating with the wet ingredients. Stir until just combined. Fold in chopped green onions if using.
  9. Bake:
  10. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full. Bake for 18-22 minutes, or until the muffins are golden on top and a toothpick inserted comes out clean.
