Description

A hearty casserole featuring layers of corned beef, sauerkraut, Swiss cheese, and rye bread, baked to perfection.


Ingredients

  • 1 pound corned beef, thinly sliced
  • 2 cups sauerkraut, drained and rinsed
  • 2 cups Swiss cheese, shredded
  • 1 cup Thousand Island dressing
  • 4 slices rye bread, cubed
  • 1/2 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a greased baking dish, layer the corned beef slices evenly.
  3. Spread the sauerkraut over the corned beef layer.
  4. Sprinkle half of the Swiss cheese over the sauerkraut.
  5. Drizzle the Thousand Island dressing over the cheese.
  6. Top with the cubed rye bread and drizzle with melted butter.
  7. Sprinkle the remaining Swiss cheese on top.
  8. Bake in the preheated oven for 25-30 minutes, or until bubbly and golden.

Notes

For a crispier top, broil for the last 2 minutes. Serve with a side of pickles for an authentic Reuben experience.
