Description

This hearty one-pot meal combines smoked sausage, green beans, and baby potatoes in a flavorful sauce for an easy weeknight dinner.


Ingredients

  • 1 lb smoked sausage or kielbasa, sliced
  • 1 lb fresh green beans, trimmed
  • 1.5 lbs baby potatoes, halved
  • 1 cup chicken broth
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Add sliced sausage and cook until browned, about 5 minutes.
  3. Add onion and garlic, cook 2-3 minutes until softened.
  4. Add potatoes, green beans, broth, paprika, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer covered for 20-25 minutes until potatoes are tender.
  6. Serve hot.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove.
