Description

These cookies are soft and chewy with a spicy ginger flavor, perfect for holiday baking.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon water
  • 1/4 cup molasses

Instructions

  1. In a medium bowl, whisk together the flour, ginger, cinnamon, cloves, and salt.
  2. In a large bowl, beat the butter and sugar until creamy.
  3. Add the egg, water, and molasses to the butter mixture and beat until combined.
  4. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
  5. Wrap the dough in plastic wrap and chill for at least 1 hour.
  6. Preheat oven to 350°F (175°C).
  7. On a floured surface, roll out the dough to 1/4-inch thickness.
  8. Cut out gingerbread men shapes and place on a baking sheet.
  9. Bake for 8-10 minutes or until edges are firm.
  10. Cool on a wire rack.

Notes

For softer cookies, avoid overbaking. Decorate with royal icing if desired.
