Ingredients

  • 2 boneless, skinless chicken breasts
  • 4 garlic cloves, minced
  • 1 large cucumber, thinly sliced
  • 1 cup hummus
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon

Instructions

  1. In a bowl, combine minced garlic, chili powder, salt, black pepper, and olive oil to make a marinade.
  2. Add the chicken breasts to the marinade and let them sit for 15-20 minutes.
  3. Heat a skillet over medium heat and cook the chicken for 6-7 minutes per side until fully cooked.
  4. While the chicken cooks, prepare the salad by mixing sliced cucumber, hummus, fresh cilantro, and lemon juice in a separate bowl.
  5. Slice the cooked chicken and assemble the bowl by placing the chicken over the hummus cucumber salad.
  6. Serve immediately for the best flavor.

Notes

For a spicier version, add extra chili powder or fresh chili peppers. Pair with rice or quinoa for a heartier meal.
