For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 2 jalapeños, seeded and finely chopped
  • 1/4 cup honey
  • 1 tbsp lime juice
  • 1 tsp lime zest

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease an 8-inch square baking pan.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, and egg. Pour into dry ingredients and stir until just combined.
  4. Fold in chopped jalapeños. Pour batter into prepared pan and bake for 20-25 minutes or until golden and a toothpick comes out clean.
  5. While cornbread bakes, combine honey, lime juice, and lime zest in a small bowl.
  6. Drizzle lime honey over warm cornbread before serving.
