Description
A fresh and vibrant salad combining tender spinach with sweet berries, juicy oranges, crunchy pecans, tangy feta cheese, and a delightful honey-balsamic dressing.
Ingredients
Scale
- For the Salad:
- 6 cups fresh baby spinach leaves
- 1 cup fresh blueberries
- 1 cup fresh raspberries
- 2 mandarin oranges, peeled and segmented
- 1/2 cup pecans, toasted and chopped
- 1/2 cup crumbled feta cheese
- For the Honey-Balsamic Dressing:
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1/4 cup olive oil
- Salt and freshly ground black pepper, to taste
Instructions
- Prepare the dressing: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until well combined. Set aside.
- Toast the pecans: In a dry skillet over medium heat, toast the pecans for 3-5 minutes until fragrant. Remove from heat and chop if necessary.
- Assemble the salad: In a large salad bowl, add the spinach leaves, blueberries, raspberries, mandarin orange segments, toasted pecans, and crumbled feta cheese.
- Drizzle with the honey-balsamic dressing and toss gently to coat all ingredients evenly.
- Serve immediately for the best freshness.
Notes
For extra crunch, ensure pecans are toasted just before adding. You can add grilled chicken for a protein boost. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but dressing separately to prevent sogginess.
