  • 1 cup fresh blueberries
  • 1 cup fresh raspberries
  • 2 mandarin oranges, peeled and segmented
  • 1/2 cup pecans, toasted and chopped

  • For the Honey-Balsamic Dressing:
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Prepare the dressing: In a small bowl, whisk together the balsamic vinegar, honey, olive oil, salt, and pepper until well combined. Set aside.
  2. Toast the pecans: In a dry skillet over medium heat, toast the pecans for 3-5 minutes until fragrant. Remove from heat and chop if necessary.
  3. Assemble the salad: In a large salad bowl, add the spinach leaves, blueberries, raspberries, mandarin orange segments, toasted pecans, and crumbled feta cheese.
  4. Drizzle with the honey-balsamic dressing and toss gently to coat all ingredients evenly.
  5. Serve immediately for the best freshness.

Notes

For extra crunch, ensure pecans are toasted just before adding. You can add grilled chicken for a protein boost. Leftovers can be stored in an airtight container in the refrigerator for up to 1 day, but dressing separately to prevent sogginess.
