For the Crust:

- 2 cups old-fashioned rolled oats
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- For the mix-ins:
- 1/2 cup dried cranberries
- 1/2 cup chopped walnuts
- 1/4 cup sunflower seeds
- For the wet ingredients:
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
- 1 teaspoon vanilla extract
- 1 large egg
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper.
- 2. In a large bowl, whisk together oats, flour, brown sugar, baking soda, salt, and cinnamon.
- 3. Stir in cranberries, walnuts, and sunflower seeds until evenly distributed.
- 4. In a separate bowl, mix melted butter, honey, vanilla, and egg until smooth.
- 5. Pour wet ingredients into dry ingredients and stir until fully combined.
- 6. Press mixture firmly into prepared pan using damp hands or a spatula.
- 7. Bake for 22-25 minutes until golden brown at edges.
- 8. Cool completely in pan before cutting into 8 bars.
Notes
Store in airtight container for up to 5 days. For softer bars, microwave for 10 seconds before serving. Substitute any dried fruit or nuts as preferred.
