Description

Delicious stuffed bell peppers filled with a savory mixture of rice, ground meat, and vegetables, baked to perfection.


Ingredients

  • 6 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  4. Add onion and garlic to the skillet and cook until softened.
  5. Stir in cooked rice, diced tomatoes, salt, pepper, and paprika. Cook for 5 minutes.
  6. Stuff the mixture into the bell peppers.
  7. Place peppers in a baking dish, cover with foil, and bake for 30 minutes.
  8. Remove foil, sprinkle with cheese, and bake for another 10 minutes until cheese is melted.
  9. Serve hot.

Notes

You can use ground turkey instead of beef for a lighter option. Adjust seasonings to taste.
