Description

This Sweet Hawaiian Crockpot Chicken is a delicious, easy meal with tender chicken simmered in a sweet and tangy pineapple sauce.


Ingredients

  • 2 pounds boneless skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1 can (20 oz) pineapple chunks, drained

Instructions

  1. Place chicken breasts in the bottom of the crockpot.
  2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, and ground ginger.
  3. Pour the sauce over the chicken in the crockpot.
  4. Add the drained pineapple chunks on top.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender.
  6. Shred the chicken with forks and stir to combine with the sauce before serving.

Notes

For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the crockpot during the last 30 minutes of cooking. Serve over rice for a complete meal.
