This Sweet Hawaiian Crockpot Chicken is a delicious, easy meal with tender chicken simmered in a sweet and tangy pineapple sauce.

- 2 pounds boneless skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup brown sugar
- 1/3 cup soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ground ginger
- 1 can (20 oz) pineapple chunks, drained
Instructions
- Place chicken breasts in the bottom of the crockpot.
- In a bowl, whisk together pineapple juice, brown sugar, soy sauce, garlic, and ground ginger.
- Pour the sauce over the chicken in the crockpot.
- Add the drained pineapple chunks on top.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is tender.
- Shred the chicken with forks and stir to combine with the sauce before serving.
Notes
For a thicker sauce, mix 2 tablespoons of cornstarch with 2 tablespoons of water and stir into the crockpot during the last 30 minutes of cooking. Serve over rice for a complete meal.
