Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 8 ounces brie cheese, sliced
  • 1/2 cup cranberry sauce
  • 1/2 cup pecans, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potato rounds with olive oil, salt, and pepper.
  3. Arrange on a baking sheet and bake for 20-25 minutes until tender.
  4. Remove from oven and top each round with brie cheese, cranberry sauce, and pecans.
  5. Bake for an additional 5 minutes until cheese melts.
