Description

Crispy baked sweet potato slices topped with creamy brie cheese, tart cranberries, and crunchy pecans for a perfect appetizer.


Ingredients

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 4 ounces brie cheese, sliced
  • 1/2 cup dried cranberries
  • 1/2 cup pecans, chopped
  • Fresh thyme for garnish

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper; arrange on the baking sheet.
  3. Bake for 20-25 minutes until tender and slightly caramelized.
  4. Remove from oven and top each round with a slice of brie, cranberries, and pecans.
  5. Return to oven for 5 minutes until cheese melts.
  6. Garnish with fresh thyme and serve warm.

Notes

For a vegan version, substitute brie with a dairy-free alternative.
