- 4 ounces brie cheese, sliced
- 1/2 cup dried cranberries

- Fresh thyme for garnish
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper; arrange on the baking sheet.
- Bake for 20-25 minutes until tender and slightly caramelized.
- Remove from oven and top each round with a slice of brie, cranberries, and pecans.
- Return to oven for 5 minutes until cheese melts.
- Garnish with fresh thyme and serve warm.
