Description

A classic sweet potato pie topped with gooey marshmallows for a delightful twist.


Ingredients

  • 2 cups mashed cooked sweet potatoes
  • 1 cup evaporated milk
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 unbaked 9-inch pie crust
  • 2 cups miniature marshmallows

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix mashed sweet potatoes, evaporated milk, sugar, eggs, vanilla, cinnamon, and nutmeg until smooth.
  3. Pour the mixture into the unbaked pie crust.
  4. Bake for 15 minutes, then reduce oven temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until a knife inserted in the center comes out clean.
  5. Remove from oven and top with miniature marshmallows.
  6. Return to oven and broil for 1-2 minutes until marshmallows are golden brown. Watch closely to avoid burning.
  7. Let cool before serving.

Notes

For a lighter version, use low-fat milk and reduce sugar. Serve with whipped cream.
