A classic sweet potato pie topped with gooey marshmallows for a delightful twist.
Ingredients

- 2 cups mashed cooked sweet potatoes
- 1 cup evaporated milk
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 unbaked 9-inch pie crust
- 2 cups miniature marshmallows
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, mix mashed sweet potatoes, evaporated milk, sugar, eggs, vanilla, cinnamon, and nutmeg until smooth.
- Pour the mixture into the unbaked pie crust.
- Bake for 15 minutes, then reduce oven temperature to 350°F (175°C) and bake for an additional 35-40 minutes, or until a knife inserted in the center comes out clean.
- Remove from oven and top with miniature marshmallows.
- Return to oven and broil for 1-2 minutes until marshmallows are golden brown. Watch closely to avoid burning.
- Let cool before serving.
Notes
For a lighter version, use low-fat milk and reduce sugar. Serve with whipped cream.
