- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup fresh lime juice
- 1 tablespoon lime zest
- 1/2 cup sour cream
Instructions
- Preheat your oven to 350Β°F (175Β°C) and prepare a muffin tin with liners.
- In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
- Press the mixture into the bottom of each muffin cup to form the crust.
- Bake the crusts for 5 minutes, then remove and let cool slightly.
- In a separate bowl, beat the cream cheese and 3/4 cup sugar until smooth.
- Add eggs one at a time, mixing well after each addition.
- Stir in lime juice, lime zest, and sour cream until fully incorporated.
- Pour the filling over the cooled crusts in the muffin tin.
- Bake for 20-25 minutes or until set.
- Cool in the tin for 10 minutes, then refrigerate for at least 2 hours before serving.
Notes
For the best flavor, use freshly squeezed lime juice and garnish with whipped cream and lime slices.
