Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup fresh lime juice
  • 1 tablespoon lime zest
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 350Β°F (175Β°C) and prepare a muffin tin with liners.
  2. In a bowl, mix graham cracker crumbs, 1/4 cup sugar, and melted butter until combined.
  3. Press the mixture into the bottom of each muffin cup to form the crust.
  4. Bake the crusts for 5 minutes, then remove and let cool slightly.
  5. In a separate bowl, beat the cream cheese and 3/4 cup sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition.
  7. Stir in lime juice, lime zest, and sour cream until fully incorporated.
  8. Pour the filling over the cooled crusts in the muffin tin.
  9. Bake for 20-25 minutes or until set.
  10. Cool in the tin for 10 minutes, then refrigerate for at least 2 hours before serving.

Notes

For the best flavor, use freshly squeezed lime juice and garnish with whipped cream and lime slices.
