A classic Thai stir-fry dish featuring wide rice noodles tossed with Chinese broccoli, egg, and a savory sauce made from soy sauce, oyster sauce, and sesame oil. Quick and flavorful!

- 8 oz wide rice noodles (fresh or dried)
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 cup Chinese broccoli (gai lan), chopped
- 2 eggs, beaten
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tsp sugar
- 1/2 tsp white pepper
- Optional: 1/2 cup sliced tofu or chicken
- Chili flakes for garnish
Instructions
- Soak rice noodles in warm water for 10 minutes if using dried, then drain. Cook fresh noodles briefly if necessary.
- Heat 1 tbsp oil in a wok over high heat. Add garlic and stir-fry for 30 seconds until fragrant.
- Add broccoli and stir-fry for 2-3 minutes until tender-crisp.
- Push ingredients to one side, add remaining oil, and scramble the eggs for 1 minute.
- Mix everything together and add noodles.
- Pour in soy sauces, oyster sauce, sugar, and white pepper. Toss well for 2-3 minutes.
- Serve hot with chili flakes if desired.
Notes
For authenticity, use Thai dark soy sauce for color. Adjust sweetness and spice to taste. Can add protein like shrimp or beef.
