For the Crust:

  • 2 cups old-fashioned rolled oats
  • 1 tsp baking powder
  • 1.5 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 large ripe banana, mashed
  • 1.5 cups milk (dairy or plant-based)
  • 1/4 cup maple syrup or honey
  • 1 large egg
  • 1 tsp vanilla extract
  • For the mix-ins:
  • 1 cup fresh or frozen blueberries
  • 1/2 banana, sliced (for topping)
  • Optional toppings:
  • Extra blueberries
  • Drizzle of maple syrup
  • Chopped nuts (walnuts or pecans)

Instructions

1. Prepare the Crust:

  1. 1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. 2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
  3. 3. In another bowl, whisk mashed banana, milk, maple syrup, egg, and vanilla until smooth.
  4. 4. Pour wet ingredients into dry ingredients and stir until combined.
  5. 5. Gently fold in blueberries.
  6. 6. Pour mixture into the prepared baking dish. Top with banana slices.
  7. 7. Bake for 35–40 minutes, until golden and set in the center.
  8. 8. Let cool slightly before serving. Add optional toppings if desired.

Notes

Store leftovers covered in the fridge for up to 4 days. Reheat in the microwave or oven. For a vegan version, use flax egg and plant-based milk.
