For the Crust:
- For the oatmeal base:
- 2 cups old-fashioned rolled oats
- 1 tsp baking powder
- 1.5 tsp ground cinnamon
- 1/4 tsp salt
- 1 large ripe banana, mashed
- 1.5 cups milk (dairy or plant-based)
- 1/4 cup maple syrup or honey
- 1 large egg
- 1 tsp vanilla extract
- For the mix-ins:
- 1 cup fresh or frozen blueberries
- 1/2 banana, sliced (for topping)
- Optional toppings:
- Extra blueberries
- Drizzle of maple syrup
- Chopped nuts (walnuts or pecans)
Instructions
1. Prepare the Crust:
- 1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
- 2. In a large bowl, mix oats, baking powder, cinnamon, and salt.
- 3. In another bowl, whisk mashed banana, milk, maple syrup, egg, and vanilla until smooth.
- 4. Pour wet ingredients into dry ingredients and stir until combined.
- 5. Gently fold in blueberries.
- 6. Pour mixture into the prepared baking dish. Top with banana slices.
- 7. Bake for 35–40 minutes, until golden and set in the center.
- 8. Let cool slightly before serving. Add optional toppings if desired.
Notes
Store leftovers covered in the fridge for up to 4 days. Reheat in the microwave or oven. For a vegan version, use flax egg and plant-based milk.
