For the Crust:

  • For Jell-O Layers:
  • 1 (3 oz) package mango-flavored gelatin
  • 1 (3 oz) package pineapple-flavored gelatin
  • 2 cups boiling water (divided)
  • 1 cup cold water (divided)
  • For Coconut Cream Layer:
  • 1 (3.4 oz) package instant coconut cream pudding mix
  • 1 1/2 cups cold milk
  • 1/2 cup whipped topping (plus extra for garnish)
  • For Garnish:
  • 1/4 cup toasted coconut flakes
  • Fresh pineapple chunks (optional)
  • Mango slices (optional)

Instructions

1. Prepare the Crust:

  1. 1. Prepare the mango Jell-O layer: Dissolve mango gelatin in 1 cup boiling water. Stir in 1/2 cup cold water. Pour into parfait glasses, filling each 1/3 full. Chill for 1 hour or until set.
  2. 2. Prepare the pineapple Jell-O layer: Dissolve pineapple gelatin in remaining 1 cup boiling water. Stir in remaining 1/2 cup cold water. Let cool slightly (about 15 minutes).
  3. 3. Carefully pour pineapple mixture over set mango layer, filling glasses another 1/3 full. Chill for another hour.
  4. 4. Make coconut cream layer: Whisk pudding mix with milk for 2 minutes until thickened. Fold in whipped topping.
  5. 5. Spoon coconut mixture over set pineapple layer. Chill for at least 2 hours.
  6. 6. Before serving, garnish with whipped topping, toasted coconut, and fresh fruit if desired.

Notes

For a vegan version, use plant-based gelatin, coconut milk instead of dairy milk, and vegan whipped topping. Layers can be made a day ahead – cover after fully set. For clearer layers, let each Jell-O mixture cool to room temperature before pouring over set layers.
