A rich and flavorful turkey gravy made completely from scratch using turkey drippings, perfect for Thanksgiving or any roasted turkey meal.
Ingredients

- 1/4 cup turkey fat or butter
- 1/4 cup all-purpose flour
- 2 cups turkey broth or drippings
- 1 cup low-sodium chicken broth (if needed)
- 1 tablespoon fresh thyme leaves, chopped
- 1 tablespoon fresh sage leaves, chopped
- Salt and black pepper to taste
Instructions
- After roasting the turkey, remove it from the pan and pour the drippings into a measuring cup, separating the fat from the liquid if desired.
- In a large saucepan, melt the turkey fat or butter over medium heat.
- Whisk in the flour and cook for 2-3 minutes until lightly browned.
- Gradually whisk in the turkey broth or drippings, stirring constantly to avoid lumps.
- Add chicken broth if needed to reach desired consistency.
- Stir in thyme, sage, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 10-15 minutes until thickened.
- Adjust seasoning and serve hot over turkey.
Notes
For a smoother gravy, strain through a fine-mesh sieve. If it’s too thin, simmer longer; if too thick, add more broth.
