  • Author: Chef Emy
  • Total Time: 30 minutes
  • Yield: 8 1x

Description

A rich and flavorful turkey gravy made completely from scratch using turkey drippings, perfect for Thanksgiving or any roasted turkey meal.

Ingredients

Scale
  • 1/4 cup turkey fat or butter
  • 1/4 cup all-purpose flour
  • 2 cups turkey broth or drippings
  • 1 cup low-sodium chicken broth (if needed)
  • 1 tablespoon fresh thyme leaves, chopped
  • 1 tablespoon fresh sage leaves, chopped
  • Salt and black pepper to taste

Instructions

  1. After roasting the turkey, remove it from the pan and pour the drippings into a measuring cup, separating the fat from the liquid if desired.
  2. In a large saucepan, melt the turkey fat or butter over medium heat.
  3. Whisk in the flour and cook for 2-3 minutes until lightly browned.
  4. Gradually whisk in the turkey broth or drippings, stirring constantly to avoid lumps.
  5. Add chicken broth if needed to reach desired consistency.
  6. Stir in thyme, sage, salt, and pepper.
  7. Bring to a boil, then reduce heat and simmer for 10-15 minutes until thickened.
  8. Adjust seasoning and serve hot over turkey.

Notes

For a smoother gravy, strain through a fine-mesh sieve. If it’s too thin, simmer longer; if too thick, add more broth.
