For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 24 oz cream cheese, softened
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 3 large eggs
  • 2 cups fresh blueberries
  • 1/4 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup cold butter, cubed

Instructions

1. Prepare the Crust:

  1. Preheat oven to 325Β°F. Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
  2. Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until blended. Pour over crust.
  3. Toss blueberries with 1 tbsp flour and sprinkle over cheesecake batter.
  4. Combine brown sugar, remaining flour, and cold butter until crumbly. Sprinkle over blueberries.
  5. Bake for 50-55 minutes until center is almost set. Cool completely before refrigerating for at least 4 hours.
