For the Crust:
- 2 cups graham cracker crumbs
- 1/2 cup melted butter
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 3 large eggs
- 2 cups fresh blueberries
- 1/4 cup brown sugar
- 1/2 cup all-purpose flour
- 1/4 cup cold butter, cubed
Instructions
1. Prepare the Crust:
- Preheat oven to 325Β°F. Mix graham cracker crumbs with melted butter and press into a 9-inch springform pan.
- Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing just until blended. Pour over crust.
- Toss blueberries with 1 tbsp flour and sprinkle over cheesecake batter.
- Combine brown sugar, remaining flour, and cold butter until crumbly. Sprinkle over blueberries.
- Bake for 50-55 minutes until center is almost set. Cool completely before refrigerating for at least 4 hours.
