For the Crust:
- 1 cup unsalted butter, melted
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 3/4 cup cocoa powder
- 1/2 tsp salt
- 1 cup chocolate chips
- 1/2 cup sweetened condensed milk
- 1/2 tsp peppermint extract
- 1 cup powdered sugar
- Green food coloring (optional)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a large bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
- Stir in flour, cocoa powder, and salt until just combined. Fold in chocolate chips.
- Spread half the brownie batter into the prepared pan.
- In a separate bowl, mix condensed milk, peppermint extract, powdered sugar, and food coloring (if using) to form the mint fudge layer.
- Drop spoonfuls of mint fudge over the brownie batter, then spread gently. Top with remaining brownie batter.
- Bake for 30-35 minutes or until a toothpick comes out clean. Cool completely before slicing.
