For the Crust:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 3/4 cup cocoa powder
  • 1/2 tsp salt
  • 1 cup chocolate chips
  • 1/2 cup sweetened condensed milk
  • 1/2 tsp peppermint extract
  • 1 cup powdered sugar
  • Green food coloring (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. In a large bowl, mix melted butter, sugar, eggs, and vanilla until smooth.
  3. Stir in flour, cocoa powder, and salt until just combined. Fold in chocolate chips.
  4. Spread half the brownie batter into the prepared pan.
  5. In a separate bowl, mix condensed milk, peppermint extract, powdered sugar, and food coloring (if using) to form the mint fudge layer.
  6. Drop spoonfuls of mint fudge over the brownie batter, then spread gently. Top with remaining brownie batter.
  7. Bake for 30-35 minutes or until a toothpick comes out clean. Cool completely before slicing.
