For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 24 oz cream cheese, softened
- 3/4 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract
- 1/2 cup caramel sauce
- 1 cup shredded coconut, toasted
- 1/2 cup chocolate chips, melted
Instructions
1. Prepare the Crust:
- Preheat oven to 325°F. Mix graham cracker crumbs, 1/4 cup sugar, and melted butter. Press into a 9-inch springform pan.
- Beat cream cheese and 3/4 cup sugar until smooth. Add eggs one at a time, then vanilla. Pour over crust.
- Swirl caramel sauce and toasted coconut into the batter. Bake for 45-50 minutes until center is set.
- Cool completely, then refrigerate for 4 hours. Drizzle with melted chocolate before serving.
