- 1 lb mixed mushrooms (such as cremini, shiitake, and portobello), sliced
- 2 tablespoons butter (or olive oil for vegan)
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth (or mushroom broth for deeper flavor)
- 1 tablespoon soy sauce (low-sodium preferred)
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- Salt and black pepper, to taste
- 1 tablespoon all-purpose flour (optional, for thickening)
Instructions
- Heat the butter in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes until softened and translucent.
- Add the minced garlic and sliced mushrooms to the skillet. Cook for 5-7 minutes, stirring occasionally, until the mushrooms are browned and have released their moisture.
- Sprinkle in the flour (if using) and stir to coat the mushrooms evenly, cooking for 1 minute to eliminate the raw flour taste.
- Pour in the vegetable broth and soy sauce, then add the thyme. Bring the mixture to a simmer and reduce the heat to low. Let it simmer for 8-10 minutes, stirring occasionally, until the gravy thickens slightly.
- Season with salt and black pepper to taste. Taste and adjust seasoning as needed.
- Remove from heat and serve immediately, or keep warm for up to 10 minutes. It will thicken further as it rests.
Notes
For a thicker gravy, simmer longer or add more flour. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat gently on the stovetop.
