Description

  • Crust:
  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • Filling:
  • 4 large eggs
  • 1 1/2 cups light corn syrup
  • 1 1/2 cups granulated sugar
  • 3 tablespoons unsalted butter, melted
  • 1 1/2 teaspoons vanilla extract
  • 2 1/2 cups pecans, chopped

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line a 9Γ—13 inch baking pan with parchment paper.
  2. In a large bowl, mix the flour, sugar, and salt. Add the softened butter and mix until crumbly. Press the mixture evenly into the bottom of the prepared pan.
  3. Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and set aside.
  4. In another bowl, whisk together the eggs, corn syrup, sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for an additional 30-35 minutes or until the filling is set. Cool completely before cutting into bars.

Notes

For a crispier crust, chill the dough before baking. Store in an airtight container for up to 5 days.
