- Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- Filling:
- 4 large eggs
- 1 1/2 cups light corn syrup
- 1 1/2 cups granulated sugar
- 3 tablespoons unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups pecans, chopped
Instructions
- Preheat the oven to 350Β°F (175Β°C). Line a 9Γ13 inch baking pan with parchment paper.
- In a large bowl, mix the flour, sugar, and salt. Add the softened butter and mix until crumbly. Press the mixture evenly into the bottom of the prepared pan.
- Bake the crust for 15-20 minutes or until lightly golden. Remove from the oven and set aside.
- In another bowl, whisk together the eggs, corn syrup, sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 30-35 minutes or until the filling is set. Cool completely before cutting into bars.
Notes
For a crispier crust, chill the dough before baking. Store in an airtight container for up to 5 days.
