Description
This hearty white bean and Italian sausage stew is a one-pot wonder that’s perfect for chilly nights. Serve with crusty bread or alongside a fresh salad.

- 1 pound Italian sausage, sliced into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (15 ounce) can white beans, drained and rinsed
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 cup beef broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes
- 1/4 cup chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add sausage and cook until browned, about 5 minutes.
- Add onion, garlic, and bell peppers. Cook until vegetables are softened, about 5 minutes.
- Stir in diced tomatoes, white beans, kidney beans, beef broth, oregano, basil, salt, black pepper, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.
- Stir in parsley, if using, and serve hot.
Notes
For a spicier stew, increase the red pepper flakes. This recipe can be made ahead and reheated.
