White Bean and Sausage Stew

Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound sausage, sliced
  • 1 onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned, about 5 minutes.
  2. Add diced onion, carrots, celery, and minced garlic to the pot. Cook for 5-7 minutes, stirring occasionally, until vegetables are softened.
  3. Stir in the drained white beans, chicken broth, and dried thyme. Season with salt and pepper.
  4. Bring to a boil, then reduce heat and let simmer for 20-25 minutes, stirring occasionally, until the stew thickens slightly.
  5. Taste and adjust seasoning as needed. Garnish with fresh parsley before serving.

Notes

This stew tastes even better the next day. Store leftovers in an airtight container in the refrigerator for up to 3 days. Serve with crusty bread for soaking up the broth.
