White Bean and Sausage Stew

Ingredients

  • 1 lb Italian sausage, sliced
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
  2. Remove the sausage from the pot and set aside. In the same pot, add the onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
  3. Add the beans, tomatoes, broth, thyme, oregano, salt, and pepper. Return the sausage to the pot.
  4. Bring to a boil, then reduce heat and simmer for 20-25 minutes until flavors are well combined.
  5. Serve hot with crusty bread if desired.

Notes

This stew can be made ahead and reheated. For extra flavor, use a mix of white beans like cannellini and great northern.
