- 1 lb Italian sausage, sliced
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat. Add the sliced sausage and cook until browned, about 5 minutes.
- Remove the sausage from the pot and set aside. In the same pot, add the onion, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.
- Add the beans, tomatoes, broth, thyme, oregano, salt, and pepper. Return the sausage to the pot.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until flavors are well combined.
- Serve hot with crusty bread if desired.
Notes
This stew can be made ahead and reheated. For extra flavor, use a mix of white beans like cannellini and great northern.
