A seasonal twist on the classic Caesar salad featuring roasted delicata squash croutons and a creamy dressing.

For the Crust:
- 1 large delicata squash, seeded and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 large head romaine lettuce, chopped
- 1/2 cup grated parmesan cheese
- 1/4 cup Caesar dressing
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss cubed delicata squash with olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until tender and slightly crispy.
- In a large bowl, combine chopped romaine lettuce with Caesar dressing, lemon juice, and minced garlic.
- Add roasted delicata squash croutons and grated parmesan cheese to the salad. Toss gently to combine.
- Serve immediately, topped with additional parmesan if desired.
