A seasonal twist on the classic Caesar salad featuring roasted delicata squash croutons and a creamy dressing.

For the Crust:

  • 1 large delicata squash, seeded and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 large head romaine lettuce, chopped
  • 1/2 cup grated parmesan cheese
  • 1/4 cup Caesar dressing
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss cubed delicata squash with olive oil, smoked paprika, salt, and pepper. Roast for 20-25 minutes until tender and slightly crispy.
  2. In a large bowl, combine chopped romaine lettuce with Caesar dressing, lemon juice, and minced garlic.
  3. Add roasted delicata squash croutons and grated parmesan cheese to the salad. Toss gently to combine.
  4. Serve immediately, topped with additional parmesan if desired.
