A delicious pasta salad inspired by the flavors of a classic club sandwich, perfect for picnics or potlucks.

For the Crust:
- 8 oz rotini pasta
- 1 cup diced cooked chicken
- 1/2 cup diced cooked bacon
- 1/2 cup diced tomatoes
- 1/2 cup diced cucumber
- 1/4 cup diced red onion
- 1/2 cup shredded cheddar cheese
- 1/2 cup mayonnaise
- 2 tbsp Dijon mustard
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- Cook the pasta according to package instructions. Drain and rinse under cold water.
- In a large bowl, combine the cooled pasta, chicken, bacon, tomatoes, cucumber, red onion, and cheddar cheese.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.
- Pour the dressing over the pasta mixture and toss gently to coat.
- Sprinkle with chopped parsley before serving.
- Refrigerate for at least 1 hour before serving to allow flavors to meld.
