A refreshing and creamy pasta salad with tender chicken, crisp vegetables, and a tangy dressing.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 2 cups elbow macaroni, cooked and cooled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tablespoon Dijon mustard
  • 1 celery stalk, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the cooked macaroni and shredded chicken.
  2. In a separate bowl, whisk together mayonnaise, sour cream, and Dijon mustard to make the dressing.
  3. Add the celery, red bell pepper, red onion, and parsley to the macaroni and chicken mixture.
  4. Pour the dressing over the salad and toss gently to coat all ingredients evenly.
  5. Season with salt and pepper to taste. Chill in the refrigerator for at least 1 hour before serving.
