For the Crust:
- 2 cups cooked chicken, shredded
- 2 cups elbow macaroni, cooked and cooled
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 celery stalk, diced
- 1/2 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the cooked macaroni and shredded chicken.
- In a separate bowl, whisk together mayonnaise, sour cream, and Dijon mustard to make the dressing.
- Add the celery, red bell pepper, red onion, and parsley to the macaroni and chicken mixture.
- Pour the dressing over the salad and toss gently to coat all ingredients evenly.
- Season with salt and pepper to taste. Chill in the refrigerator for at least 1 hour before serving.
