Delicious and easy peach pie bars with a buttery crust and sweet peach filling.

For the Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 4 cups fresh peaches, peeled and sliced
- 1/4 cup brown sugar
- 1 tablespoon lemon juice
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 tablespoon cornstarch
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
- In a large bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
- Press two-thirds of the mixture into the prepared pan to form the crust. Bake for 12 minutes.
- In another bowl, combine peaches, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Spread over the baked crust.
- Sprinkle the remaining crumb mixture over the peach filling. Bake for 30 minutes or until golden brown.
- Let cool completely before slicing into bars.
