Delicious and easy peach pie bars with a buttery crust and sweet peach filling.

For the Crust:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 4 cups fresh peaches, peeled and sliced
  • 1/4 cup brown sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 tablespoon cornstarch

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, mix flour, granulated sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  3. Press two-thirds of the mixture into the prepared pan to form the crust. Bake for 12 minutes.
  4. In another bowl, combine peaches, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Spread over the baked crust.
  5. Sprinkle the remaining crumb mixture over the peach filling. Bake for 30 minutes or until golden brown.
  6. Let cool completely before slicing into bars.
