For the Crust:
- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup whole milk
- 1 cup peach pie filling
- 1 tsp vanilla extract
- 1/4 cup powdered sugar (for dusting)
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in milk and vanilla extract until a dough forms.
- Roll out the dough into a rectangle and spread peach pie filling evenly over the surface.
- Roll the dough tightly into a log and slice into 8 equal pieces.
- Place each piece into the muffin tin and bake for 20-25 minutes until golden.
- Let cool slightly, then dust with powdered sugar before serving.
