For the Crust:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/4 tsp salt
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 tsp vanilla extract
- 4 ripe plums, pitted and sliced
- 1 cup heavy cream
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
- In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix milk, melted butter, egg, and vanilla extract. Combine with dry ingredients and stir until smooth.
- Pour batter into the prepared pan and arrange plum slices on top.
- Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.
- In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream over the cooled cake and serve.
