For the Crust:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 tsp vanilla extract
  • 4 ripe plums, pitted and sliced
  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • 1/2 tsp vanilla extract

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix milk, melted butter, egg, and vanilla extract. Combine with dry ingredients and stir until smooth.
  4. Pour batter into the prepared pan and arrange plum slices on top.
  5. Bake for 25-30 minutes or until a toothpick inserted comes out clean. Let cool.
  6. In a separate bowl, whip heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  7. Spread the whipped cream over the cooled cake and serve.
