For the Crust:

- 1/2 cup rolled oats
- 1/2 cup milk (dairy or plant-based)
- 1/4 cup Greek yogurt
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- For topping:
- 1 tbsp rainbow sprinkles
- 1 tsp white chocolate chips
- 1/2 tsp vanilla protein powder (optional)
Instructions
1. Prepare the Crust:
- 1. In a mason jar or airtight container, combine oats, milk, yogurt, chia seeds, vanilla extract, and maple syrup.
- 2. Stir vigorously until fully mixed (about 30 seconds).
- 3. Cover and refrigerate for at least 4 hours (best overnight).
- 4. Before serving, stir in half the sprinkles to create a funfetti effect.
- 5. Top with remaining sprinkles, white chocolate chips, and a dusting of vanilla protein powder if using.
- 6. Enjoy cold straight from the fridge or let sit at room temperature for 10 minutes if preferred.
Notes
For vegan version: Use plant-based yogurt and milk. Sprinkles will bleed color if mixed in too early – add just before serving for best presentation. Oats keep for 3 days refrigerated.
